Lemon Crisp Cookies

Woo!!  These were a great choice!

I found this Lemon Crisp Cookie recipe from Pinterest.  I'm going to post the pic from the blog, because it's MUCH prettier than mine.  lol


 Isn't that pretty?!  Mine didn't look that good, but they certainly tasted good!  They were a refreshing change from the typical heavy holiday foods and desserts.






The only changes I made to the recipe was to use the juice of the whole lemon instead of only half.  I love that fresh lemon taste.


 The cookies bake super fast, so you really have to keep an eye on them.  They went from soft to crisp the minute I turned my back.  As long as they don't burn, they're very good either way.  They look better if they don't brown, but if they do they're like sweet lemon crackers.  Very delicious!

I didn't make the frosting for them, because I thought they were sweet enough by themselves.  Stefan and I ate half the batch and sent the other half to my brother in Egypt.

Overall, I love these cookies and would definitely make them again!
