Banana Oatmeal Muffins

This recipe is from Green Lite Bites (which I found on Pinterest, of course).  It's a Banana Oatmeal Muffin, but it's really more of a non-muffin.  The only ingredients are bananas, almond milk, eggs, oatmeal, vanilla extract, and chocolate chips.


The recipe works better the riper the bananas, but the ones I just bought from the store worked just fine.
The batter came together very quickly and easily.  I have to admit I was hesitant.  Stefan asked me what made them "muffins", I guessed maybe the oatmeal?  But wasn't exactly sure.
 I took them out of the oven right at 30 minutes.  I left them on the stove to cool a little, then put them in the fridge in a ziploc bag.
These were interesting.  Stefan wasn't a huge fan of them.  I thought they were OK.  They tasted like dried up cooked oatmeal.  Which sounds worse than I mean for it to, but that's the best way I could think to describe them.  They're good enough to have for breakfast in a pinch, or as a snack.  However, I don't think they're good enough to take to work and rave about.

I would probably make these again because they ARE good for a quick snack/breakfast, and I really like the little bits of chocolate in them.
